When I'm in the mood to settle into the sofa for a Netflix binge, there's nothing better than having a mountain of crispy, juicy chicken wings in front of me. I love smashing these with a bowl of dip and my favourite hot sauce... Netflix and CHILLI, BABY!
Ingredients
Chicken wings
Olive oil
Cayenne powder
Sea salt
Smoked paprika
Garlic powder
Baking powder
Perl Lâs blue cheese
Soured cream
Your favourite hot sauce
Method
Preheat oven to 170°C
Pat the chicken wings dry with kitchen paper
In a bowl give the wings a splash of olive oil, then season with cayenne powder (I like 'em spicy!), salt, smoked paprika and garlic powder/granules. Use any spices you like!
The secret ingredient: sprinkle a teaspoon of baking powder and massage each wing with some love to ensure even covering for maximum crispiness!!!
Arrange on a wire rack in a tray, and into the oven they go. I like my wings mega crispy and super fall-off-the-bone, so I cook them for 1.5-2hrs. TOTALLY WORTH THE WAIT!!
The dip: crumble Perl Lâs cheese or your favourite blue cheese into a bowl of soured cream, season to taste - EASY!! Keep covered in the fridge
Serve the crispy wings with a bottle of your favourite hot sauce, Perl Lâs dip, and go to your happy place...
